Berry Pie

We are baking today. Asha requested strawberry pie - gluten free, of course. We actually can get fresh local strawberries here, but that requires a 45 minute drive to Waimea. So we used frozen - only we didn't have enough so it became a mixed berry pie as we had a small bag of frozen strawberries, blueberries, raspberries and marrionberries. That is why the pureed part is so dark. It is setting up in the fridge. Now we are off to make zucchini bread (with local, fresh zucchini!)

Pizza Pockets

Before Asha's diagnoses she would always keep a lookout at the market for Amy's Pizza Pockets to go on sale. When they did we would buy a load of them to keep in the freezer. It is one of the items she stills looks at wistfully in the freezer case. Today we finally tried to make a gluten free version. I used the Traditional Piecrust recipe from Roben Ryberg's http://www.amazon.com/Gluten-Free-Kitchen-Delicious-Recipes-Intolerance/dp/0761522727/ref=pd_bbs_sr_1?ie=UTF8&s=books&qid=1216253924&sr=8-1
We filled them with Enrico's Gluten Free Pizza Sauce, shredded cheese and Hormel pepperoni that we found at our local market and that says it is gluten free right on the label! Asha enjoyed them. I am going to freeze one and will report the results of reheating once we try it.
